General description

β-Cyclodextrin is a cyclic oligosaccharide with a cage-like supramolecular structure. The internal cavity is apolar and can form inclusion complexes with many compounds such as fats, flavors, and colors. This molecular complexation ability of β-CD is used in the food industry for flavor protection or flavor delivery and in the cosmetic industry for the controlled release of fragrances.
