General description

Maltopentaose, also known as Amylopentaose, is a naturally occurring oligosaccharide and endogenous metabolite composed of five α-1,4-linked glucose molecules. It is the shortest chain pentasaccharide categorized under maltodextrin and finds applications in exploring glycation and phosphorylation of α-lactalbumin. Notably, at a concentration of 1 mM, maltopentaose enhances the α-amylase synthesis rate in B. stearothermophilus. Additionally, it serves as a substrate for porcine pancreatic α-amylase (PPA), making it valuable for investigating various PPA inhibitors.

Application

A partial hydrolysis of maltopentaose has been used to prepare a dextran ladder in a study that assessed cationic labeling of oligosaccharides.
Maltopentaose is a versatile compound that finds application in metabolomics and biochemical research.

Alpha-lactalbumin (alpha-LA) was glycated with maltopentaose (MP) through the Maillard reaction (MP-alpha-LA) and subsequently phosphorylated by dry heating in the presence of pyrophosphate to investigate its structure and physiological functions. Glycation occurred effectively, and the sugar content of alpha-LA increased

The detailed mechanistic aspects for the final starch digestion process leading to effective alpha-glucogenesis by the 2 mucosal alpha-glucosidases, human sucrase-isomaltase complex (SI) and human maltase-glucoamylase (MGAM), are poorly understood. This is due to the structural complexity and vast variety
