General description

Casein is a calcium (phosphate) binding phosphoprotein. It is present in mammalian milk and constitutes about 80% of the total bovine milk proteins. Bovine milk consists of four casein peptides, such as αs1-,αs2-,β-, and κ-caseins. Casein exists in milk as micelles. Casein from bovine is produced by the mammary gland under multihormonal control.

Application

Casein solution from bovine milk has been used as a substrate for cyclic-AMP dependent protein kinase.
Casein solution from bovine milk has been used:
  • to determine the protease activity in ground beef and its effects on bacteriocin
  • as a non-specific substrate to measure the activity of the protein phosphatase 2C (PP2C) fusions
  • in sodium dodecyl sulfate (SDS)-polyacrylamide gel for casein zymography

Biochem/physiol Actions

Casein micelle system inhibits the pathological calcification of mammary glands. It acts as a source of amino acids for the growth of neonates.

Preparation Note

Hydrolyzed and partially dephosphorylated. Prepared from a mixture of α, β and κ caseins.
