Stearoyl CoA is used to study the specificity and kinetics of stearoyl-CoA desaturase(s) which lead to the formation of monounsaturated fatty acids.
Stearoyl coenzyme A lithium salt may be used as a substrate in the stearoyl-CoA desaturase assay in microsomes.

Biochem/physiol Actions

Stearoyl CoA is a saturated fatty acid metabolite involved in polyunsaturated fatty acid synthesis and the PPAR signaling pathway. Stearoyl CoA is a substrate for the enzyme stearoyl-CoA desaturase. Stearoyl CoA desaturation is the crucial step in unsaturated fatty acid biosynthesis. Stearoyl CoA is converted to oleoyl-CoA by stearoyl-CoA desaturase.
